This was my attempt at being healthier and getting some protein. I’ve only made it once, back when I was living at my parents house, because they own one of those wonderful hand-held blenders. But it was delicious and hearty and even though I don’t know what healthy really means, I’m pretty sure this is.
Ingredients:
- 1 package of firm tofu
- 1 of each chopped red and green pepper
- 1 medium white onion chopped
- Soy Sauce
- Red Pepper Flakes
- Chili Powder
- 1 can of crushed tomatoes
- Salt and Pepper to taste
Preparation:
In a sauce pan, sauté the onions and peppers together in a little olive oil. When your onions turn slightly clear add about a quarter cup of soy sauce, shake some red pepper flakes over it, and use a tiny bit of chili powder to spice it up. Add in the tofu and stir it up, with all the good spiciness. Once your tofu is no longer white, and more orange from soaking up all the other things, pour everything in your sauté pan into a larger sauce pan. Add the can of crushed tomatoes, stir it up and go to work with your handheld blender. I mixed mine pretty well, so it was pretty smooth with no chunks in it and I went the cheap route and poured it over some plain ramen noodles (without the flavor packet.)
